A comforting and beginner-friendly bacon, egg, and tater tot casserole that’s crispy, cheesy, and perfect for breakfast, brunch, or even dinner.

  • 1 (32 oz) bag frozen tater tots
  • 8 slices bacon, cooked and crumbled
  • 8 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack or pepper jack cheese
  • 1/4 cup green onions, chopped (optional)
  • Butter or nonstick spray for greasing

Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Evenly layer frozen tater tots across the bottom of the baking dish.
  3. In a large bowl, whisk together the eggs, milk, salt, pepper, and dry mustard until smooth and well combined.
  4. Scatter the crumbled, cooked bacon evenly over the tater tots.
  5. Top with shredded cheddar and Monterey Jack cheeses.
  6. Carefully pour the egg mixture evenly over the casserole ingredients.
  7. Sprinkle green onions over the top if using.
  8. Bake uncovered for 40–45 minutes, until the top is golden and the eggs are set.
  9. Let rest for 5–10 minutes before slicing and serving.

Notes

  • To keep tater tots crispy, don’t stack them; use a single layer.
  • Use foil if the casserole top browns too quickly.
  • Make ahead by assembling the night before and baking in the morning.
  • Swap bacon with sausage, ham, or a vegetarian alternative.
