A quick and healthy Mediterranean-inspired breakfast, baked feta eggs combine roasted vegetables, creamy feta, and baked eggs for a flavorful and satisfying dish.

Ingredients

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
  • Optional: chopped fresh basil or fresh chives for topping

Instructions

  1. Preheat oven to 400°F. Lightly oil individual ramekins or a large baking dish.
  2. Add tomatoes, bell pepper, red onion, garlic, and feta to the dish. Drizzle with olive oil.
  3. In a small bowl, combine oregano, salt, thyme, black pepper, and red pepper flakes. Sprinkle over the vegetables and feta.
  4. Place the dish in the oven and bake for 25 minutes until the vegetables soften and tomatoes begin to burst.
  5. Remove from the oven and gently stir the mixture. Add chopped spinach and mix until wilted.
  6. Create small wells in the mixture and crack the eggs into them.
  7. Return the dish to the oven and bake for another 10 minutes, or until egg whites are set.
  8. Top with chopped herbs if desired and serve warm with crusty bread or toast.

Notes

  • Use ramekins that hold at least 10 ounces for individual servings.
  • To avoid spills, place ramekins on a baking sheet before baking.
  • For a firmer egg, bake an additional 2-3 minutes.
  • Can substitute feta with goat cheese or Boursin.
