Baked Nectarines with Cinnamon Honey Sauce is a simple yet indulgent dessert that combines the sweetness of fresh nectarines with a rich cinnamon honey sauce. The warm nectarines, enhanced with honey and cinnamon, are baked to perfection and topped with creamy vanilla ice cream. This 4-ingredient recipe is the perfect summer treat for any occasion.

Ingredients

Scale
  • 3 nectarines, halved and pitted
  • ¼ cup honey
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • Vanilla ice cream (or your favorite ice cream)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with non-stick cooking spray.
  2. In a small bowl, whisk together the honey, cinnamon, and vanilla extract to make the sauce. Set aside.
  3. Cut the nectarines in half and remove the pits. Place the halves cut side up in the prepared baking dish.
  4. Spoon the cinnamon honey sauce over each nectarine half. Reserve some sauce for drizzling later if desired.
  5. Bake the nectarines for 25-30 minutes or until they are soft and the sauce is bubbling.
  6. Once baked, top each nectarine half with a scoop of vanilla ice cream and drizzle some of the reserved sauce or pan juices over the top before serving.

Notes

  • If using overripe nectarines, the texture may become mushy after baking. Slightly underripe nectarines work best.
  • Feel free to double the sauce if you prefer extra for drizzling.
  • You can use peaches or plums instead of nectarines for a different flavor profile.
  • For a dairy-free option, substitute with coconut milk ice cream or another plant-based alternative.
