This Baked Potato Soup is a creamy and comforting dish, packed with the classic flavors of a loaded baked potato, including crispy bacon, sharp cheddar cheese, and sour cream. It’s an easy-to-make, one-pot meal that’s perfect for cozy nights.

Ingredients

  • 6 strips bacon
  • 1/2 medium onion, chopped
  • 4 large Russet potatoes, diced
  • 1/4 cup flour
  • 4 cups whole milk
  • 1 cup chicken broth
  • 1 clove garlic, minced
  • 3/4 cup grated cheddar cheese (or more to taste)
  • Chopped scallions, to taste
  • 3/4 cup sour cream (or more to taste)
  • Salt & pepper, to taste

Instructions

  1. Cut the bacon into strips and fry it in a large soup pot over medium-high heat until crispy (about 10 minutes). Remove the bacon and set it aside, leaving 2 tablespoons of bacon fat in the pot.
  2. Add the chopped onion to the pot and sauté for 5 minutes, until softened.
  3. Stir in the flour and cook for 1 minute.
  4. Slowly whisk in the whole milk until the flour dissolves.
  5. Pour in the chicken broth, add the garlic and diced potatoes. Scrape any browned bits off the bottom of the pot.
  6. Increase the heat to high, bring the soup to a simmer, then lower the heat and cover the pot slightly. Let the soup simmer for 20 minutes or until the potatoes are tender.
  7. Optional: Mash some of the potatoes with a potato masher for a creamier texture.
  8. Stir in the sour cream, cheddar cheese, and most of the bacon. Leave some for topping.
  9. Season with salt and pepper to taste.
  10. Serve the soup in bowls, garnished with the remaining bacon, cheddar cheese, and scallions.

Notes

  • Reheat the soup on low heat, adding more broth or milk if it thickens too much.
  • For extra creaminess, blend part of the soup with an immersion blender.
  • For added heat, try adding cayenne pepper or red pepper flakes.
