Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 10-inch Bundt pan with butter or cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat together the sugar, eggs, and vegetable oil until well combined. Add the vanilla extract and stir until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  5. Fold in the grated carrots and chopped nuts (if using) into the batter.
  6. Pour the batter into the prepared Bundt pan and spread it evenly.
