  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder

  • 1/4 tsp salt
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 1/2 cups finely grated carrots (about 2 medium carrots)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, beat the eggs, sugar, and vegetable oil until smooth and combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix.
  5. Fold in the grated carrots until evenly incorporated.
  6. Spoon the batter into the cupcake liners, filling each about two-thirds full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool completely on a wire rack.
  9. While the cupcakes cool, prepare the frosting by beating the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract and beat until fluffy.
  10. Once the cupcakes are completely cool, pipe or spread the cream cheese frosting onto each cupcake.

Notes

  • Be sure to use freshly grated carrots for the best texture.
  • Allow the cupcakes to cool completely before frosting to prevent the frosting from melting.
  • If you prefer a denser cupcake, you can add 1/2 cup of chopped walnuts or raisins to the batter.
  • To make the frosting firmer, refrigerate it for 30 minutes before applying it to the cupcakes.
