Cheesy Baked Cauliflower Tots are a delicious and healthier alternative to traditional tater tots, offering a low-carb, gluten-free option that’s crispy on the outside and cheesy on the inside. Perfect as a snack or side dish, these tots are packed with flavor and easy to make.

Ingredients

  • 1/2 large head cauliflower, coarsely chopped
  • 1/3 cup sharp cheddar cheese
  • 1/4 cup coarsely grated Parmesan cheese
  • 2 tablespoons almond flour
  • 1/2 teaspoon Vege-Sal or regular salt
  • 1/2 teaspoon Spike Seasoning
  • Fresh-ground black pepper to taste
  • 1 egg

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Coarsely chop the cauliflower and place in a microwave-safe bowl. Cover and microwave on high for 2 minutes.
  3. Remove the wrap, drain excess water, and pulse the cauliflower in a food processor until finely chopped.
  4. In a large bowl, combine chopped cauliflower with cheddar, Parmesan, almond flour, Vege-Sal, Spike seasoning, and black pepper. Stir until well mixed.
  5. Add the egg and mix until everything is evenly coated.
  6. Spray a mini muffin pan with non-stick spray and scoop out rounded spoonfuls of the mixture into each muffin cup using a one-tablespoon cookie scoop.
  7. Bake for 15 minutes, then flip each tot and bake for another 15 minutes, or until golden brown and crispy.
  8. Serve hot and enjoy!
