Cilantro Lime Chicken is a flavorful and fresh dish that combines zesty lime, cilantro, and honey to create a simple, juicy, and tender chicken perfect for grilling or baking. It’s a healthy and quick meal, great for any night of the week.

  • 4 boneless skinless chicken breasts or thighs
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/4 cup fresh orange juice
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cumin
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a bowl, combine lime juice, lime zest, orange juice, olive oil, honey, cumin, soy sauce, garlic, and cilantro. Add salt and pepper to taste.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over the chicken. Seal and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.
  3. Preheat the grill or oven. If grilling, oil the grates lightly to prevent sticking.
  4. Grill or bake the chicken until it reaches an internal temperature of 165°F (75°C), about 6–8 minutes per side on the grill or 20–25 minutes in the oven, depending on thickness.
  5. While cooking, occasionally baste the chicken with the reserved marinade to keep it moist and flavorful.
  6. Once cooked, allow the chicken to rest for 5–10 minutes before slicing and serving.

Notes

  • For juicier chicken, pound the chicken breasts to an even thickness before marinating.
  • If using chicken thighs, adjust cooking time accordingly as thighs cook faster.
  • For extra flavor, try adding chili flakes to the marinade for a spicy twist.
  • This recipe can be made ahead. Marinate the chicken overnight for more flavor.
