Cucumber sushi is a fun, fresh, and healthy alternative to traditional sushi. This no-cook recipe features a crisp cucumber base filled with vibrant vegetables, avocado, and smoked salmon for a satisfying snack or appetizer. It’s easy to prepare, customizable to your taste, and perfect for any occasion, from potlucks to casual meals.

Ingredients

Scale
  • 2 large cucumbers
  • 1 cup sushi rice, cooked
  • 4 ounces smoked salmon (optional)
  • 1 avocado, sliced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned

Instructions

  1. Cut each cucumber in half lengthwise and hollow out the center by removing the seeds with a spoon or knife.
  2. Start by adding a layer of sushi rice to the hollowed cucumber, pressing gently to create space for other ingredients.
  3. Layer the smoked salmon, avocado, red bell pepper, and carrots, compressing each layer as you add them.
  4. Once fully stuffed, slice the cucumber into ½-inch rounds and serve with soy sauce or spicy mayo if desired.

Notes

  • Choose large cucumbers for easier hollowing and filling.
  • Use a dull knife to compress the layers of ingredients for better adhesion.
  • For a vegetarian version, skip the smoked salmon and add extra vegetables.
  • Store leftovers in an airtight container for up to 2 days if containing avocado, or up to 4 days without.
