Ingredients

Scale
  • 4 cooked chicken breasts, shredded
  • 325g sweetcorn (1 tin), drained
  • 1/2 red onion, finely chopped
  • 100g cream cheese
  • 2 tbsp BBQ sauce
  • 125g grated mozzarella or cheddar cheese
  • 4 large wraps
  • 1 tbsp sunflower oil (optional for frying)
  • Salt and freshly ground black pepper

Instructions

  1. Shred the chicken using two forks or a mixer.
  2. In a large bowl, mix the shredded chicken with sweetcorn, red onion, cream cheese, BBQ sauce, cheese, and salt and pepper.
  3. Divide the mixture between the wraps, placing it in the center.
  4. Fold in the sides of the wrap and roll tightly from the bottom.
  5. For a crispy finish, heat sunflower oil in a pan over medium-low heat and fry the wraps for 4-5 minutes on each side until golden brown.
  6. Serve immediately or store for later use.

Notes

  • Use leftover cooked chicken for a faster prep time.
  • For a crispy texture, pan-fry the wraps after rolling them.
  • Substitute wholemeal or gluten-free wraps if preferred.
  • Use mozzarella for a gooey melt or cheddar for a stronger flavor.
  • Store leftovers in the fridge for up to 3 days, reheating by pan-frying.
