Fruit pizza is a fun and colorful dessert that combines a sweet brown sugar cookie crust, a creamy cream cheese frosting, and your favorite fresh fruits. It’s easy to make and perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 (8 ounce) package low-fat cream cheese
  • 23 tablespoons maple syrup or honey (or 1 cup powdered sugar)
  • 1 teaspoon vanilla extract
  • pinch of fine sea salt
  • Fresh strawberries, blueberries, raspberries, blackberries, or any other fruit of your choice
  • Optional: fresh honey for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the butter and brown sugar until light and fluffy. Add the egg, vanilla, and almond extract, and mix until combined.
  4. Add the dry ingredients to the butter mixture and mix until just combined. Be careful not to over-mix.
  5. Press the dough evenly into the prepared pan. If needed, wet your fingers with water to prevent the dough from sticking.
  6. Bake for 15-18 minutes or until the dough is lightly golden. Let it cool for about 20 minutes.
  7. In the meantime, prepare the frosting by whisking together the cream cheese, maple syrup or honey, vanilla extract, and a pinch of sea salt until smooth and creamy.
  8. Spread the frosting evenly over the cooled cookie crust.
  9. Top with fresh fruit of your choice and drizzle with honey, if desired.
  10. Slice, serve, and enjoy immediately.

Notes

  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
  • If you prefer a dairy-free option, use vegan cream cheese in place of regular cream cheese.
  • Fruit pizza tastes best when served immediately, as the fruit can make the crust soggy over time.
  • For a healthier version, substitute the cream cheese frosting with vanilla Greek yogurt.
