These No Bake Mini Mint Cheesecakes are creamy, minty individual cheesecakes with a chocolate graham cracker crust, no baking required and topped with melted chocolate and chopped Andes Mint candies. They’re perfect for holidays like St. Patrick’s Day, parties, or anytime you want a festive dessert.

Ingredients

  • 2 cups chocolate graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 2 teaspoons mint extract
  • Green food coloring (amount as desired)
  • 1 cup heavy cream
  • ½ cup chocolate chips, melted
  • 810 Andes Mint candies, chopped

Instructions

  1. Line a standard muffin tin with cupcake liners and set aside.
  2. In a medium bowl, combine chocolate graham cracker crumbs and melted butter; mix until crumbly.
  3. Divide crumb mixture among liners and press firmly into bottoms.
  4. In a stand mixer bowl, beat softened cream cheese and sugar until smooth.
  5. Add mint extract, green food coloring, and heavy cream; mix on low then medium speed until smooth and fluffy.
  6. Divide filling evenly into prepared liners to the top.
  7. Refrigerate for at least 4 hours to set.
  8. Once chilled, melt chocolate chips and add a dollop on each cheesecake; sprinkle with chopped Andes Mint candies.

 

Notes

  • Store cheesecakes in an airtight container in the refrigerator for up to 3 days.
  • Wait to add melted chocolate and Andes Mint toppings until just before serving to keep fresh appearance.
