This No Bake Summer Berry Icebox Cake is the perfect summer dessert — cool, creamy, fruity, and incredibly easy to make. Layers of graham crackers, vanilla pudding, whipped topping, and fresh berries soften into a cake-like texture after chilling, creating a refreshing treat without turning on the oven.

Ingredients

Scale
  • 19 oz graham crackers
  • 8 oz cream cheese, softened
  • 2 (3.4 oz) packages Vanilla Instant Pudding
  • 2½ cups cold milk
  • 12 oz Cool Whip (or homemade whipped cream)
  • 3 cups fresh strawberries, sliced
  • 1½ cups fresh blueberries
  • 2 oz white chocolate chips

Instructions

  1. In a large bowl, beat softened cream cheese and dry pudding mixes with a mixer until smooth.
  2. Gradually add cold milk while continuing to beat until fully blended.
  3. Gently fold in Cool Whip, reserving ½ cup for topping.
  4. Spread a thin layer of Cool Whip in the bottom of a 9×13 inch pan.
  5. Layer 5 graham crackers across the center of the pan, then 2 more broken to fit the sides.
  6. Spread a layer of pudding mixture over the crackers, then top with sliced strawberries and blueberries.
  7. Repeat the layers: graham crackers, pudding, berries — 2 more times (3 layers total).
  8. Cover and refrigerate for at least 4 hours or overnight to allow the graham crackers to soften.
  9. Melt white chocolate chips as per package instructions.
  10. Drizzle melted white chocolate over the top of the cake before serving. Use a spoon or piping bag for precision.

Notes

  • Best made a day in advance for ideal texture.
  • Pat berries dry before layering to prevent excess moisture.
  • Use coconut whipped cream and dairy-free pudding for a vegan option.
  • Do not freeze, as it may affect the texture of the whipped cream and fruit.
