These oatmeal lemon crumble bars are the perfect combination of a chewy oat base and a bright, zesty lemon filling. Ideal for breakfast, dessert, or an afternoon snack, they’re simple to prepare and full of texture and flavor.

Ingredients

  • 2 cups old-fashioned oats
  • 1 1/2 cups all-purpose flour
  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 egg (for filling)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease or line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix oats, flour, butter, sugar, and 2 eggs until a crumbly mixture forms.
  3. Press about 3/4 of this oat mixture into the bottom of the prepared pan to create an even crust.
  4. In a separate bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and 1 egg to create the lemon filling.
  5. Pour the lemon filling evenly over the oat crust and spread with a spatula.
  6. Sprinkle the remaining oat mixture on top of the lemon layer to form the crumble topping.
  7. Bake for 25–30 minutes, or until the top is golden and the center is just set.
  8. Cool the bars completely in the pan before cutting into squares for clean slices.

Notes

  • Make sure to let the bars cool entirely before slicing to help the filling set properly.
  • For a less sweet version, reduce the sugar slightly or use unsweetened condensed milk with added lemon zest.
  • You can use whole wheat flour in place of all-purpose for a more wholesome version.
  • Store in an airtight container at room temperature for 3 days, or refrigerate for up to a week.
  • These bars can also be frozen for up to 1 month. Wrap tightly in plastic and freeze in a sealed container.
