This hearty Slow Cooker Cowboy Casserole is a comforting one-pot dish made with seasoned ground beef, beans, corn, tomatoes, and spices.   • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) kidney or black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup frozen corn
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (optional, for topping)

Instructions

  1. In a skillet over medium heat, cook the ground beef, breaking it up as it browns. Once fully cooked, drain excess fat and transfer to the slow cooker.
  2. Add chopped onions, bell peppers, garlic, drained beans, diced tomatoes, corn, chili powder, cumin, paprika, salt, and pepper to the slow cooker. Stir until well combined.
  3. Cover and cook on low for 6–8 hours or on high for 3–4 hours until flavors are well blended and vegetables are tender.
  4. About 30 minutes before serving, taste and adjust seasoning if needed. Sprinkle cheese over the top if using, cover again, and let the cheese melt.
  5. Serve hot, optionally garnished with sour cream, chopped herbs, or avocado slices.

Notes

  • Substitute ground beef with ground turkey or chicken for a leaner version.
  • If casserole is too thick, add a splash of broth or water to adjust consistency.
  • Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently on stovetop or microwave.
  • Customize spice level with additional chili powder, cayenne, or diced jalapeños.
