These strawberry muffins are a delicious, easy-to-make treat that brings together the sweetness of ripe strawberries with a light, fluffy texture. Perfect for breakfast, snacks, or brunch gatherings, this recipe offers a great way to enjoy fresh fruit in a baked form.

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 3/4 cup milk
  • 1 1/2 cups fresh strawberries, diced
  • 1 tbsp demerara (turbinado) sugar

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners. Lightly spray with cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla and almond extract until the batter looks smooth.
  5. Gradually add the flour mixture to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Stir gently to combine.
  6. Fold in the diced strawberries, making sure not to overmix the batter.
  7. Fill each muffin cup with batter using an ice cream scoop. Sprinkle the tops with the remaining strawberries and demerara sugar.
  8. Bake for 30 minutes, or until golden brown and a toothpick comes out clean. Cool in the pan for 25 minutes before transferring to a wire rack.

Notes

  • Do not overmix the batter, as it can result in dense muffins.
  • Frozen strawberries can be used, but make sure to thaw them and drain excess liquid.
  • For a dairy-free version, substitute almond milk and coconut oil.
  • These muffins freeze well for up to 3 months.
  • Make sure the muffins are golden on top and spring back when touched to check for doneness.
