This Sweet Potato Taco Bowl is a vibrant, flavorful, and filling meal combining smoky roasted sweet potatoes, taco-seasoned beef, creamy guacamole, and refreshing pico de gallo. It’s a versatile dish that’s quick to make, perfect for meal prep, and customizable to your dietary needs.

  • 1 large sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • ½ lb ground beef (or turkey/lentils for a vegetarian option)
  • 1 tbsp taco seasoning
  • ½ cup pico de gallo
  • ¼ cup guacamole
  • 2 tbsp sour cream (or dairy-free alternative)

Instructions

  1. Preheat your oven to 425°F (220°C). Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread them out evenly on a baking sheet and roast for 15 minutes. Flip them over and roast for another 10-15 minutes until golden and crispy.
  2. While the sweet potatoes are roasting, brown the ground beef in a skillet over medium heat. Once cooked, add taco seasoning and 2 tbsp of water, simmering for 2-3 minutes until thickened.
  3. Prepare the toppings: Dice tomatoes, onion, cilantro, and jalapeño for the pico de gallo. Mash the avocado with lime juice and a pinch of salt for the guacamole.
  4. Assemble the bowl: Start with a base of roasted sweet potatoes, then top with taco-seasoned beef, guacamole, and pico de gallo. Finish with a dollop of sour cream and garnish with fresh cilantro.

Notes

  • Make sure not to overcrowd the sweet potatoes when roasting to ensure they get crispy.
  • Store the components separately for meal prep, and assemble when ready to eat.
  • For a vegetarian version, replace the beef with black beans or lentils.
