Crispy baked cauliflower wings tossed in spicy buffalo sauce—a simple, healthy, and vegan-friendly alternative to classic wings that’s perfect for beginners.

  • 4 cups cauliflower florets (about 1 medium cauliflower)
  • 1 cup superfine almond flour
  • 1/2 cup unsweetened almond milk (or any plant-based milk)
  • 1 tsp onion salt
  • 1 tsp paprika (smoked or regular)
  • 1/2 tsp garlic powder
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot or Tessamae’s)
  • 2 tbsp vegan butter (or ghee if not strictly vegan)

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper. Cut the cauliflower into bite-sized florets.
  2. In a large bowl, whisk together almond flour, almond milk, onion salt, garlic powder, and paprika until smooth.
  3. Add the cauliflower to the batter and toss to coat evenly. Let excess batter drip off and place florets on the prepared sheet in a single layer.
  4. Bake for 20–25 minutes, flipping halfway, until golden and slightly crispy.
  5. While baking, mix buffalo sauce and melted vegan butter or ghee in a small bowl.
  6. Remove cauliflower from the oven, pour buffalo sauce over the florets, and toss to coat well.
  7. Return to the oven and bake for another 10 minutes, until edges are crisp and sauce begins to caramelize.
  8. Serve hot with your favorite dipping sauce and sides.

Notes

  • Use fresh cauliflower, not frozen, for the best texture.
  • To reduce spice, mix buffalo sauce with a small amount of maple syrup or dairy-free yogurt.
  • Air fryer option: Cook at 375°F for 12–14 minutes, shake halfway, then toss with sauce and air fry 2–3 more minutes.
  • Do not microwave leftovers—reheat in oven for best results.
