This upside-down ombré citrus cake features layers of caramelized citrus slices baked beneath a soft, buttery sponge. The result is a visually stunning cake with bright citrus flavor, balanced sweetness, and a moist, tender crumb.

  • 3 medium oranges, thinly sliced (about 450 g / 1 lb)
  • 1 medium grapefruit, thinly sliced (about 300 g / 10.5 oz)
  • 1 medium lemon, thinly sliced (about 120 g / 4 oz)
  • 150 g (3/4 cup) granulated sugar, for caramel base
  • 170 g (3/4 cup) unsalted butter, softened
  • 200 g (1 cup) granulated sugar
  • 3 large eggs (about 150 g)
  • 240 g (2 cups) all-purpose flour
  • 8 g (2 tsp) baking powder
  • 2 g (1/2 tsp) salt
  • 180 ml (3/4 cup) whole milk
  • 5 ml (1 tsp) vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a 23 cm (9-inch) round cake pan.
  2. Sprinkle 150 g (3/4 cup) sugar evenly over the bottom of the pan and arrange citrus slices in an ombré pattern from center to edge.
  3. In a large bowl, cream the butter and 200 g (1 cup) sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Add dry ingredients to the batter alternately with milk, mixing until just combined.
  7. Carefully pour the batter over the citrus slices and smooth the top.
  8. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the cake for 15 minutes, then invert onto a serving plate and allow citrus topping to settle.

Notes

  • Slice citrus as thinly as possible to ensure tenderness after baking.
  • Use parchment paper on the bottom of the pan for easier release.
  • Allow the cake to cool slightly before flipping to avoid sticking.
  • Serve with whipped cream or vanilla yogurt if desired.
