This Vegan Apple Fritter Bread combines layers of yeasted cinnamon dough with apple butter and gooey cinnamon sugar apples for a truly decadent dessert.

Ingredients

  • ¾ cup warm water
  • 2 ¼ teaspoons active dried yeast
  • ¼ cup melted vegan butter
  • ¼ cup sugar
  • 1 teaspoon vanilla bean paste
  • 2 ½2 ¾ cups all-purpose flour
  • 1 teaspoon ground cinnamon or apple pie spice
  • ½ teaspoon salt
  • 2 small red apples peeled and diced
  • ⅓ cup sugar
  • 1 teaspoon ground cinnamon or apple pie spice
  • ⅓ cup apple butter
  • ½ cup powdered sugar
  • ½ Tablespoon apple cider

Instructions

  1. Activate the yeast in warm water. Add sugar, melted vegan butter, and vanilla. Mix in the flour, cinnamon, and salt to form a shaggy dough.
  2. Knead the dough until smooth, then let it rise until doubled in size.
  3. While dough rises, prepare the cinnamon sugar apples by mixing apples with sugar and cinnamon.
  4. Roll out dough into discs, spread apple butter, and layer with cinnamon sugar apples.
  5. Fold dough into taco-like shapes and arrange in a loaf pan. Let rise again for 30 minutes.
  6. Bake at 350°F for 40-45 minutes until golden brown and bubbling.
  7. Cool, then top with apple cider glaze before serving.

Notes

  • If you don’t have apple butter, you can substitute with flavored jam.
  • You can make this bread refined sugar-free by using coconut sugar or maple sugar.
  • For gluten-free adaptation, this recipe may not work well due to the yeast dough’s dependence on gluten formation.
  • Store leftovers in the fridge for 3-4 days or freeze for up to 1 month.
